Amaranth is a native grain that has an exceptional balance of protein, fat and carbohydrates, domesticated between 6,000 and 8,000 years ago by the Incas in South America, who depended on grain as a staple in their diets.
The nutritional composition of amaranth has deserved it to be considered one of the 36 vegetables with the greatest nutritional potential for humanity, due to its richness in minerals and proteins, its resistance to drought and its great agricultural yield-.
Amaranth is an excellent source of amino acids, very useful for increasing the consumption of proteins of plant origin and obtaining many other valuable nutrients at the same time.
