Yogurt & Quinoa Bowl
Ingedients
- 1/2 yogurt cup.
- 1/2 Flavored Quinoa Extrudate.
- 2 sliced strawberries.
Preparation
- Serve yogurt in a cup.
- Alternate layers of quinoa, yogurt and strawberries.
- Garnish the top with strawberry slices.

Quinoa Cereal Bars
Ingedients
- 1 cup dried Turkish figs.
- 1/2 cup organic peanut butter creamy or chunky is fine.
- 3 - 4 tablespoons maple syrup.
- 2 - 4 tablespoons water.
- 1 1/2 cups quinoa flakes.
Preparation
- Preheat the oven to 325 degrees F. Line a square baking dish with parchment paper and set die.
- Add figs to a food processor and process until they are broken down and resemble small crumbles. Add peanut butter and maple syrup and process again until a dough begins to form into a large ball.
- Add water, 1 tablespoon at a time until the dough loosens from the ball and spreads out inside the bowl.
- Add quinoa flakes and pulse to combine.
- Transfer dough into prepared baking dish and press down firmly with your hands. You want the dough to be as uniform as possible in terms of the thickness so they bake evenly.
- Bake bars on center rack for 25 - 30 minutes until the edges begin to brown and they are no longer sticky.

Quinoa Vegan Cookies
Ingedients
- 1/2 cup (125 g) unsweetened applesauce
- 1/3 cup (68 g) organic cane sugar
- 1/4 cup (60 g) sunflower seed butter (or almond or peanut butter)
- 1/2 tsp sea salt
- 1 tsp baking powder
- 1 cup (100 g) rolled oats blended into fine oat flour
- 1.5 cups (190 g) cooked quinoa
Preparation
- Preheat the oven to 350 degrees F.
- Add the applesauce, sugar and butter, baking powder and salt to a mixing bowl and stir until smooth and combined.
- Make some oat flour if you don’t have any prepared, then add the oat flour and quinoa and gently fold to combine.
- Prepare a baking tray with a quick spray of non-stick cooking spray or use a silicone baking mat or parchment paper.
- Drop spoonfuls of the dough onto the baking tray to make 12 cookies. You can use your fingers to shape them a bit but no need to be perfect.
- Bake for 26 minutes.

Quinoa Truffles
Ingedients
- 1/3 cup coconut milk
- 2 ½ cups dark chocolate
- 2 cups Extruded Quinoa
Preparation
- Melt the chocolate and stir in the coconut milk.
- Add the Extruded quinoa cereal and mix well.
- Form into balls about 1 tablespoon in size and place on a baking sheet lined with parchment paper.
- Place in refrigerator for 10 minutes.
